Here’s Your Vegetarian, Gluten-Free Bali-Style Rice Paper Rolls Recipe:

Makes 10-12 rolls

Ingredients for Rice Paper Rolls

  • 1 head iceberg lettuce or red cabage
  • 2 fresh ripe mangoes, cubed
  • ½ yellow and red pepper, seeded, thinly sliced
  • 1 cup carrots, thinly sliced
  • 1 large bunch mint leaves
  • 1 large bunch cilantro, cut from stems
  • 1 package of rice paper sheets

Ginger Peanut Dipping Sauce

  • ½ cup salted natural peanut or almond butter
  • 1 ½ tbsp. tamari
  • 2-3 tbsp. maple syrup
  • ½ lime, juiced
  • ½ tsp. chili garlic sauce
  • ½ tsp. fresh grated ginger
  • Hot water (for thinning)

Preparation

Prepare the peanut sauce ahead of time by adding all ingredients except water to a mixing bowl and whisking. Add hot water 1 Tbsp. at a time and whisk until you reach desired consistency (should be pourable but thick). Set aside.

Prep veggies and lettuce leaves and set aside for easy assembly. Lower your first rice paper sheet into warm water and allow to soften. Remove from the water and place on a clean chopping board.

Add a little of each ingredient to the center of the sheet: lettuce, carrots, peppers, mango, and a healthy handful each cilantro and mint.

Gently fold up the bottom of the sheet, tuck in the two sides, and then roll to close. It may take a little practice but once you get the hang of it it becomes easy!

Repeat until all toppings are used up – you should yield about 10-12 rolls. (Remember: you can double the ingredients if you’d like to make this a main course.)

Serve with the delicious dipping sauce and enjoy!
