Ingredients:

 

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, chopped
  • 4 cups low sodium vegetable or chicken bone broth
  • 2 sweet potatoes or yams, peeled and diced
  • 1 cup red lentils, rinsed
  • 2 tablespoons Thai red curry paste (or adjust to taste)
  • 2 tablespoons nut butter of any kind (almond, cashew, peanut, or sunbutter)
  • Fresh chopped cilantro and red pepper flakes, for garnish

 

Preparation Instructions:

 

  1. In a saucepot, heat the olive oil and add the onion and garlic. Cook 3-4 minutes until the onion begins to soften.
  2. Add the broth, sweet potato, and lentils.
  3. Simmer about 20 minutes until the potato and lentils are tender.
  4. Stir in the red curry paste and nut butter until dissolved.
  5. Garnish with red pepper flakes and cilantro.
